Equipment

  • 1 Pot
  • 1 Potato Masher
  • 1 Frying Pan
  • 1 Knife

Ingredients
  

  • 3 Medium Potatoes ( peeled and cut into small cubes) (450g)
  • 60 g Butter
  • 170 g Plain Flour (plus extra for dusting)
  • 3/4 tsp Baking Powder
  • 1 tsp Salt (to taste)
  • 2 tbsp Olive Oil

Instructions
 

  • First boil the potatoes for 25 mins so they are very soft. Mash them with the butter and allow to cool (10-15 mins)
  • Add in the flour, baking powder and salt and mix to a dough
  • Add to a floured surface, roll flat to 0.5-1cm thickness and cut into squares.
  • Heat up a frying pan to medium high heat (do not add oil at this stage), and fry for 4-5 mins.
  • Remove from pan and add 2 tbsp of olive oil.
  • At this stage if you aren't eating them, you can let them cool and place in an air tight container before moving into the fridge.
  • The slices you will eat, add back into the pan and cook each side for 1-2 mins or until crispy.
