Spicy Carrot and Cumin Soup

- 1 Pot
- 1 Hand Blender (If you want to mix and smooth texture)
- 1 Knife
- 1 Chopping Board
- 1 Peeler
- Salt and Pepper (To Taste)
- 1 Cocktail Stick
Ingredients
- 3 Large Carrots (washed and first layer removed)
- 3 Medium Potatoes
- 1.7 Liters Water
- 2 Cubes Vegetable Stock
- 10 g Chorizo
- 1 Medium Onion
- 1 tbsp Grounded Cumin
- 1 tbsp Chili Flakes
- 1 Leek
- 1 tsp Natural yogurt (Per person) (optional)
- Olive Oil
- 1/2 tsp Parsley (optional)
Instructions
- Slice the leek.
- Wash and peel the first layer off the carrots and remove the ends. Slice the carrots.
- Slice the onion.
- Wash, peel and cut the potatoes into cubes of similar size.
- Add the Oil to the pot and bring up to a medium high heat.
- Add the chili flakes and the cumin to make a spicy oil – it might become a paste.
- Add the onion to the pot and fry for 3-5mins mixing to coat.
- Add in the Carrots and leek. Give another mix to coat. Fry for another 5mins or until the onion starts to soften.
- Crumble in the stock cubes and mix.
- Add a generous amount of salt and black pepper.
- Add in the water.
- Bring up to the boil and then simmer for ~20mins.
- Once the time is up, take off the heat and blend (either by pouring into a blender or using a hand blender).
- Once smooth and consistent, serve two soup ladles worth into a bowl.
- Add one tbsp of natural yogurt and mix in with a cocktail stick or similar.
- Sprinkle with some parsley and a pinch more chili flakes.
