Equipment

  • 1 Pot
  • 1 Hand Blender (If you want to mix and smooth texture)
  • 1 Knife
  • 1 Chopping Board
  • 1 Peeler
  • Salt and Pepper (To Taste)
  • 1 Cocktail Stick

Ingredients
  

  • 3 Large Carrots (washed and first layer removed)
  • 3 Medium Potatoes
  • 1.7 Liters Water
  • 2 Cubes Vegetable Stock
  • 10 g Chorizo
  • 1 Medium Onion
  • 1 tbsp Grounded Cumin
  • 1 tbsp Chili Flakes
  • 1 Leek
  • 1 tsp Natural yogurt (Per person) (optional)
  • Olive Oil
  • 1/2 tsp Parsley (optional)

Instructions
 

  • Slice the leek.
  • Wash and peel the first layer off the carrots and remove the ends. Slice the carrots.
  • Slice the onion.
  • Wash, peel and cut the potatoes into cubes of similar size.
  • Add the Oil to the pot and bring up to a medium high heat.
  • Add the chili flakes and the cumin to make a spicy oil - it might become a paste.
  • Add the onion to the pot and fry for 3-5mins mixing to coat.
  • Add in the Carrots and leek. Give another mix to coat. Fry for another 5mins or until the onion starts to soften.
  • Crumble in the stock cubes and mix.
  • Add a generous amount of salt and black pepper.
  • Add in the water.
  • Bring up to the boil and then simmer for ~20mins.
  • Once the time is up, take off the heat and blend (either by pouring into a blender or using a hand blender).
  • Once smooth and consistent, serve two soup ladles worth into a bowl.
  • Add one tbsp of natural yogurt and mix in with a cocktail stick or similar.
  • Sprinkle with some parsley and a pinch more chili flakes.
