Irish Soda Bread

Equipment

  • 1 Mixing Bowl
  • 1 Baking Parchment
  • 1 Scales

Ingredients
  

  • 250 g Plain white flour (Extra for dusting)
  • 250 g Plain wholemeal flour
  • 100 g Porridge oats (optional)
  • 1 tsp Bicarbonate of soda
  • 1 tsp salt
  • 25 g butter (Extra for greasing)
  • 500 ml Butter milk

Instructions
 

  • Pre-heat the oven to 180C / 350F.
  • In a large mixing bowl, add the flours, salt, bread soda and mix.
  • Add the butter and with your finger tips, mix together.
  • Create an opening in the middle and pour the butter milk in.
  • Hold the bowl with one hand and with the other, mix the mixture in a full clockwise motion until it comes together (it will still be sticky).
  • Add flour to the kitchen top and lightly form a circular disc (about 20cm in diameter or able to fit on a baking tray).
  • Add a little more flour to the dough on top and flip over, tucking in the sides as you rotate the mixture.
  • Add a bit more flour to the baking tray and place the dough on.
  • With a knife, score a deep cross from side to side.
  • Place in the oven for 30-35mins.
  • Tap the base and if it doesn't sound hollow, turn the bread upside down and put back in the oven for another 5mins.
  • Cut into quarters, slice each quarter.
