Pre-heat the oven to 180C / 350F.
In a large mixing bowl, add the flours, salt, bread soda and mix.
Add the butter and with your finger tips, mix together.
Create an opening in the middle and pour the butter milk in.
Hold the bowl with one hand and with the other, mix the mixture in a full clockwise motion until it comes together (it will still be sticky).
Add flour to the kitchen top and lightly form a circular disc (about 20cm in diameter or able to fit on a baking tray).
Add a little more flour to the dough on top and flip over, tucking in the sides as you rotate the mixture.
Add a bit more flour to the baking tray and place the dough on.
With a knife, score a deep cross from side to side.
Place in the oven for 30-35mins.
Tap the base and if it doesn't sound hollow, turn the bread upside down and put back in the oven for another 5mins.
Cut into quarters, slice each quarter.
